Whole Wheat Truffle Avocado Pizza Salad
Grab your fave frozen whole wheat crust
Sauté mushrooms w/shallots and purée
Drizzle truffle oil & add ur fave low fat chz
Bake according to pizza crust instructions
Next, top w/fave greens
Squeeze lemon juice to taste
Add a few slices of fresh avocado

Strawberry Protein Muffins
Ingredients:
2 c oat flour
3 scoops of strawberry protein powder (I used BSN True Mass Strawberry MilkShake)
½ tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp lemon zest
½ c coconut palm sugar
¼ c fresh lemon juice
4 egg whites
¼ c unsweetened almond milk
4 oz. organic wild berry apple sauce
1 tsp vanilla extract
NEXT
Preheat oven to 350°
Go ahead and insert 12 muffin cups in your doz muffin tray
In a large bowl mix dry ingredients☟
2 c oat flour
3 scoops of strawberry protein powder
½ tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp lemon zest
½ c coconut palm sugar
Then, mix in the wet ingredients☟
¼ c fresh lemon juice
4 egg whites
¼ c unsweetened almond milk
4 oz. organic wild berry apple sauce
1 tsp vanilla extract
Mix well :)
Pour batter evenly in the muffin tray ~ 1½ heaping tbsp
Bake for 25-30 mins
Cool 5 mins
Makes 12 Strawberry Protein Muffins
Serving size: 1 muffin

1.5 grams of fat
20 carbs

Quinoa Pizza Bites
Ingredients
1 c uncooked quinoa
2 large eggs
1 cup chopped onion (I used shallots)
1 cup shredded mozzarella cheese (I used low-fat mozzarella cheese)
2 tsp minced garlic
½ c fresh basil or 2 tbsp dried
½ c cherry tomatoes, diced (I use roma tomatoes)
½ tsp salt
1 tsp paprika
1 tsp dried oregano
Cook quinoa in 2 cups of water in a covered pot until boil then simmer for 20 mins
Preheat oven to 350°
Mix all ingredients in a large bowl
Distribute mixture into a greased muffin tin, fill each to the top ~ 1 heaping tbsp & press down each quinoa pizza bites gently to compact.
Bake for 15-20 mins
Cool 10 mins
Serve with favorite low sodium marinara sauce :9

Banana Boat Breakfast Protein Shake
Ingredients
8 oz. of almond milk
1 tsp of fat free yogurt
1 tsp of smooth creamy peanut butter
1 serving (scoop) of protein powder
1 ripe banana
1 serving of cooked oatmeal*
3 ice cubes crushed
*I normally cook the oatmeal the night before and store it in the fridge so it’s nice and cold when mixed in the shake :)
Recipe
Mix☟until well blended
almond milk
yogurt
peanut butter
protein powder
Then add banana, cooled cooked oats & crushed ice and blend
Makes a very delicious 24 oz. ultimate breakfast for champs :)
